How to Make a Portobello Mushroom Burger by Sara O’Donnell

capture_15102014_153615Portobello mushroom burgers are a great meaty and filling vegetarian alternative to traditional burgers made with animal protein.  They can be customized just as you would a regular cheeseburger.  In this video, Sara shows a simple marinade for the portobello mushroom which she grills along with bell peppers and onions.  She tops the mushroom with provolone cheese, and assembles the burger on toasted buns with flavored mayonnaise, tomatoes and lettuce.  The dairy cheese and mayonnaise can be replaced with non-dairy alternatives.  Enjoy. Philly Cheese Steak by Candice Hutchings

capture_09102014_154605A lot of people like cheese steak sandwiches.  In this video, Candice and her friend, Michael Nus, demonstrate how to make a vegan version of a Philly cheese steak sandwich.  While she and Michael have fun cooking together, she shows how easy it is to make a seitan replacement for real steak in these sandwiches.  She then tops her sandwich with sauteed mushrooms and onions.  She melts Daiya cheese for the cheese spread.  Once your seitan is made, this is a very easy sandwich to make, it is delicious, and a lot healthier than a sandwich made with animal protein.  You should try it.  It may become one of your favorite sandwiches. Vegan Queso by Candice Hutchings

Mexican Tomato Soup by Jamie Oliver

capture_01102014_134530Jamie cooks a wonderful tomato soup, and serves it with a salad, and tortilla chips.  This is a great, fast, and healthy recipe for brunch, lunch or dinner.  It’s made with spring onions, coriander, garlic, roasted peppers, canned tomatoes, water, lime and rice.  He uses a little cheese on his salad, and tortilla chips.  He also makes a yogurt drizzle on top of his soup.  You can change this from vegetarian to vegan with vegan substitutes.  This is a fast, and easy to make recipe. Tofu Omelette by Bhavna Patel

capture_01102014_130212Bhavna demonstrates an eggless omelette made with tofu, milk, spices, and garbanzo bean flour.  For a filling, she uses tomato, onion, spinach and cheese.  She points out a thicker batter could be used to make a tofu scramble, while a thinner batter is better for making an omelette.  She uses the garbanzo flour as a binder, which helps to stop the omelette from breaking as you turn it, plate it, etc.  Plant based milk and cheese can be used the replace the dairy products.  This is an easy, healthy, and delicious recipe. Vegetarian Chili Recipe by Jason Hill

Vegan” Mac and Cheese by Isa Chandra Moskowitz

capture_28092014_123900Isa has created a recipe for a creamy, gooey, melty, lucious “cheese” that can be used in a mac and cheese type meal.  Her “cheese” recipe could also be used with other recipes such as a portobello or seitan “cheesesteak” sandwich.  It’s made with onions, garlic, vegetable broth, cornstarch, tomato paste, nutritional yeast, spices, and cashews.  It’s not hard to make.  Simply saute the vegetables,  combine all the ingredients and blend everything together, then, place it in a pot and cook it until it thickens and resembles melted cheese.  Isa mixes this “cheese” with pasta and tops it with roasted brussel sprouts for her version of “mac and cheese”.  Continue reading

Black Bean Soup by Michelle Johnson

capture_28092014_112945Here is a tasty black bean soup made with fresh vegetables and canned black beans.  Michelle chops and sautes onions, carrots, celery, garlic and spices.  Then she adds rinsed canned black beans and vegetable broth, and simmers the soup mixture.  Then she blends it, reserving some beans to add to her soup for texture after she blends it.  Easy to make.  Delicious.  And good for you.
