Honey Roasted Carrots by Hugh Fearnley-Whittingstall on Food Tube

capture_22122014_144758Hugh roasts rough cut large carrots with canola (rapeseed) oil and sesame seeds.  Then he plates them, and coats them with a sauce made with orange zest, orange juice, raisins, and honey, and toasted almonds and chopped parsley.  This is a delicious and healthy side dish or appetizer.  Enjoy. Hearty Lentil Loaf by Chef AJ and Dr. Matt

capture_03122014_144808Do you like meatloaf for dinner or on a sandwich?  Chef AJ shows how to make a very healthy alternative to a traditional meatloaf.  She only needs a food processor and an oven.  However, she did use a coffee grinder to create a powder from sun dried tomatoes packaged without oil, which she uses as a seasoning.  This recipe includes healthy grains and legumes, no salt, and no oil.  She uses oats instead of an egg to act as a binder.  It gets better after is sits for a day.  So, it can be a good make ahead dish.  Enjoy. Smoky Split Pea and Sweet Potato Soup by Whitney Lauritsen

capture_04112014_125414Whitney’s soup is filled with healthy ingredients and is very easy and economical to make.  This recipe can be made in a large pot or even a slow cooker for those who want to set it and forget it.  It’s healthy ingredients include vegetable broth, onions, carrots, celery, red bell pepper, garlic, dried oregano, smoked paprika, yellow split peas, sweat potatoes, bay leaf, green onions, frozen peas.  Whitney uses vegetable broth instead of oil to saute the vegetables.  As she suggests, you could add or substitute vegetables as you wish.  And, this is another recipe that can be made ahead for use later.  Enjoy. Black Bean Soup by Michelle Johnson

capture_28092014_112945Here is a tasty black bean soup made with fresh vegetables and canned black beans.  Michelle chops and sautes onions, carrots, celery, garlic and spices.  Then she adds rinsed canned black beans and vegetable broth, and simmers the soup mixture.  Then she blends it, reserving some beans to add to her soup for texture after she blends it.  Easy to make.  Delicious.  And good for you.
