Grilled Vegetable Focaccia Sandwich by Maithily Kale

capture_09112014_140647Maithily demonstrates how to make a delicious sandwich with grilled vegetables and crunchy focaccia bread.  The main ingredients are bell peppers, eggplant and zucchini which she marinades with olive oil and spices.  She assembles the grilled vegetables with grated cheese on focaccia bread, and toasts it in a panini grill.  This is a great sandwich for lunch or cut in smaller sections as an appetizer.  For those who wish to make it a vegan sandwich, simply use non dairy cheese.  Enjoy. Smoky Split Pea and Sweet Potato Soup by Whitney Lauritsen

capture_04112014_125414Whitney’s soup is filled with healthy ingredients and is very easy and economical to make.  This recipe can be made in a large pot or even a slow cooker for those who want to set it and forget it.  It’s healthy ingredients include vegetable broth, onions, carrots, celery, red bell pepper, garlic, dried oregano, smoked paprika, yellow split peas, sweat potatoes, bay leaf, green onions, frozen peas.  Whitney uses vegetable broth instead of oil to saute the vegetables.  As she suggests, you could add or substitute vegetables as you wish.  And, this is another recipe that can be made ahead for use later.  Enjoy. Quinoa Stuffed Peppers with Eggplant & Mint by Rachel Ray

capture_02112014_143539Rachael shows how easy it is to cook quinoa.  She uses vegetable stock instead of water to cook the quinoa.  She then adds it to sauteed vegetables, and stuffs roasted red peppers with the mixture.   This recipe is very easy to make, and can be made ahead for use later in the week.  Like Rachael says, it is “delicious and super nutritious.”  Enjoy. Smoked Paprika “Cheese” by Anja

capture_22102014_141733Many non dairy cheese substitutes are made with nuts or soy products.  In this video recipe, Anja demonstrates how to make a non-dairy cheese substitute with oats, sweet potatoes, red bell peppers, nutritional yeast, smoked paprika and other spices, and lemon juice.  She blends the mixture.  She then makes an agar agar and water mixture, which she adds to and blends with the previous blended mixture.  She places this combination into molds, which she places in the refrigerator  After this “cheese” mixture has set up, she then enjoys her non-dairy “cheese”.  You can tell Anja enjoys creating and preparing vegan recipes.  You should try this too.  You can experiment with adding different herbs and spices.  I’ll bet you will be pleased with it. Lasagna with Tofu Spinach Ricotta and Cheese Sauce by Margaret Meyer
