Southwest Veggie Burgers by Chad Sarno with Whole Foods Market

capture_04122014_140604Chad makes these healthy burgers with black beans, brown rice, roasted bell pepper, fresh tomato, carrot, green onions, sweet potato, nutritional yeast, cumin, chili powder, hot pepper sauce, and garlic.  He uses the pre-cooked sweet potato as a binder in this recipe.  He mixes all these ingredients together, and places the mixture in the refrigerator for a little while to firm it up.  Then, he forms his burgers and places them in the oven.    He builds his burgers on a whole wheat bun, with guacamole, lettuce, tomato, red onion, and cilantro.  He serves it with baked “sweet potato fries”.  This is a delicious and very healthy alternative to a traditional hamburger made with meat.  Try it and Enjoy. Smoky Split Pea and Sweet Potato Soup by Whitney Lauritsen

capture_04112014_125414Whitney’s soup is filled with healthy ingredients and is very easy and economical to make.  This recipe can be made in a large pot or even a slow cooker for those who want to set it and forget it.  It’s healthy ingredients include vegetable broth, onions, carrots, celery, red bell pepper, garlic, dried oregano, smoked paprika, yellow split peas, sweat potatoes, bay leaf, green onions, frozen peas.  Whitney uses vegetable broth instead of oil to saute the vegetables.  As she suggests, you could add or substitute vegetables as you wish.  And, this is another recipe that can be made ahead for use later.  Enjoy. Tofu Cottage Cheese Stuffed Shells by Abby

capture_12102014_130215In this video, Abby prepares a tofu cottage cheese type filling in large pasta shells based on a recipe in the Naturally Gourmet cookbook.  The recipe uses store bought ingredients, so there is no need to make any special sauces, etc.  Like Abby says, this recipe is “quick, easy, and delicious”.  Enjoy. Edamame Fried Rice by Jack Scalfani

capture_29092014_132947Look at all the healthy ingredients in this recipe – edamame, brown rice, kale, broccoli, bell peppers, green onions, ginger, yellow onions, garlic, portobello mushrooms, and teriyaki sauce.  He makes an omelette with eggs that he slices into thin strips to use as a garnish after the vegetables and rice recipe is ready to serve.  This egg omelette could easily be replaced by a tofu omelette to make this a vegan recipe.
