Hearty Meatless Burger by Anja

capture_16012015_231212The main ingredients for this burger are mushrooms and lentils.  In the video, Anja demonstrates how to saute the mushrooms without any oil.  She adds the mushrooms and canned lentils to a food processor, along with tapioca flour, oats, garlic powder, onion powder, fennel seeds, mixed Italian herbs, sage, paprika, tomato paste, and salt and pepper.  She bakes her patties, rather than pan frying them.  Assemble your burgers on a bun along with your favorite condiments.  This is a healthy and delicious recipe.  Try it and Enjoy. Mediterranean Polenta Stack by Anja

capture_10122014_185305Anja demonstrates a Mediterranean polenta stack that looks great, is easy to make and is delicious.   She shows the process for cooking polenta and forming polenta rounds using  small cake molds.  She tops the polenta rounds with roasted red peppers, an avocado mix, diced tomatoes and red onions, and drizzles on some balsamic vinegar.  The recipe is great for an appetizer, lunch, dinner, snacks… or any time at all, really!  Enjoy. Vegan Fish and Chips by Candice Hutchings

capture_29102014_150637Candice uses eggplant as an alternative for fish in this recipe.  She uses a marinade of kelp granules, garlic powder, and lemon juice to make the eggplant taste more like fish rather than simply battered eggplant.  After the eggplant is marinated and coated with a similarly seasoned beer batter, Candice fries it.  She serves it with french fried potatoes and a vegan tarter sauce.  If you wish to reduce calories and the oil from frying, you could bake the fish and potatoes instead of frying them.  I’ll bet Candice’s technique for making eggplant taste like fish could be used to replace fish in other recipes.  This looks good. Baked Eggplant Parmesan by Dani Spies

capture_23102014_131437In this video recipe, Dani bakes her eggplant instead of frying it, which eliminates a lot of calories from frying.  She uses 3 dairy cheeses, a ricota mixture with an egg, parmesan, and mozzarella.  All three of those dairy cheeses and egg binder can be replaced with non dairy alternatives and an egg substitution.  This is a great basic candidate for an easy recipe makeover, replacing all the animal products with vegan alternatives.  This is an easy and delicious recipe to make, and it can be made ahead for use later in the week.  With the vegan substitutions, it is also a low fat and healthy recipe. Dairy Free Macaroni and Cheese by Candice Hutchings

capture_07102014_103854Candice demonstrates an easy recipe for making a dairy free mac-and-cheese.  She uses a (Daiya brand) vegan cheese that can be bought in most supermarkets.  She creates a mixture of the vegan cheese with soy milk and spices.  After she heats up the ingredients, she adds it to the pasta.  Then, she places the mixture in a pan or casserole dish, tops it with breadcrumbs and bakes it.  This recipe is fast and easy to make, delicious, and a lot healthier than traditional dairy based mac-and-cheese.
