Quinoa Recipe – Spanish Style by Chef Buck

capture_12092014_142156Would you like a pilaf dish with Spanish flavors, made with quinoa instead of rice?  In this video, chef Buck shows how easy it is to make one.  The technique is simple, saute a mix of chopped vegetables and spices.  Instead of adding previously cooked quinoa, Chef Buck adds uncooked quinoa to his sauteed vegetable mix, and then adds water and lets it simmer.  After it has simmered for about 15 minutes, he lets it cool a little before adding more fresh chopped raw vegetables.  This recipe is delicious!  Try it. Quinoa Pilaf – an Indian Recipe by Aditai

capture_12092014_134051Aditi shows it is easy to cook a delicious and healthy Indian style quinoa dish for either a main dish or a side dish.  The techniques are simple.  Cook the quinoa very similarly to cooking rice.  In a separate pan, saute a mixture of spices and healthy vegetables.  Then add them together, mix and add some seasonings.  This recipe includes a nice mixture of healthy ingredients, and it can be prepared in less than 20 or 30 minutes. Homemade Pasta with Wild Mushroom Tomato Sauce by Roberto Martin with Chloe Coscarelli

capture_11092014_121223Although in this video, Roberto and Chloe make homemade pasta, this wild mushroom – tomato sauce recipe is very good with store bought pasta.  The sauce recipe is made with diced onions, garlic, several types of chopped mushrooms, red wine, chopped tomatoes, dried and fresh spices and herbs.  He uses the liquid remaining after reconstituting dried porcini mushrooms to add a special rich flavor to his sauce.  This is a delicious and healthy meal.  You need to try it. Baked Penne with Sausage and Kale by Casserole Queens

capture_05092014_174507This video contains a great candidate recipe for a makeover.  The Casserole Queens prepared this recipe with turkey sausage, dairy milk and cheese.  The sausage can be replaced by vegan sausage, and the dairy milk and cheese can be replaced with non-dairy plant based alternatives.   There is a lot of cheese in this recipe.  I’ll bet if it were made with less non-dairy cheese, it would still taste wonderful.
