Black-Bean and Green-Chili Casserole by Nancy S. Hughes

capture_01092014_082824Nancy Hughes demonstrates a fast (15 minute) and healthy casserole.  It is made with canned black beans, fresh onions and tomatoes, packaged steamed rice, some seasonings and cheese.  This recipe really is fast, easy to make, healthy and delicious.

Nancy uses regular cheddar cheese in her recipe, which could easily be replaced with vegan cheddar cheese to make this a completely vegan recipe.
