Eggplant Caponata by Fabio

Fabio calls this recipe – “The Ultimate Italian Sidedish”.  It’s an eggplant caponata.  This 20 minute recipe is easy to make, flavorful, and healthy.

In his video, Fabio shows us how to prepare an eggplant, use mirapeux, and add seasonings, including a splash of vinegar, at the right time.

He uses olive oil when he sautees the mirapeux.  And, he adds a splash of olive oil for flavor.  For those trying to avoid all added fats, a makeover of this recipe could use steam frying to sautee the mirapeux , and eliminate the olive oil added for flavor.
