Gnocchi with Mushrooms, Squash, & Sauce by Thomas Keller

capture_28082014_135629Famous Chef Thomas Keller prepares a delicious vegetarian pasta dish.  This is a good makeover candidate to lower the fat content and replace some ingredients to make it a vegan recipe with easily obtained and delicious vegetables.

For makeover attempts, try to cook the gnocchi with less oil to keep the fat content down.  Vegetable broth can be used instead of the chicken broth.   Vegan butter can be substituted for the dairy butter.  Ordinary button mushrooms are very healthy, and can be used in this recipe.  Or for a more meaty flavor, portobello mushrooms could be used to replace the specialty mushrooms in the video recipe.

This dish, as it is prepared in the video, is delicious.  But, it has a lot of calories in it because of the high fat content  in some of the ingredients used.   As prepared, it would make a wonderful special occasion meal.
