Chef Raymond is a sushi chef who works in a sushi bar. He has created a website, Sushivids.com, with recipes and instructions for making a wide variety of sushi dishes. Here is his video tutorial for making sushi rice.
In this video, he shows how to wash the rice and a rule of thumb for measuring the proper water to rice ratio. Many other chefs use a fan to cool the rice while they are drizzling the vinegar on to the rice. Chef Raymond applies the vinegar to all of the rice at one time and uses a cutting technique with his wooden spoon to carefully expose the rice to air to let it dry and cool.
