How to Prepare Perfect Sushi Rice by Chef John on About.com

blog 4 020313There are many video tutorials with different techniques for preparing sushi rice.  Here is a tutorial by Chef John Mitzewich.  Chef John’s technique is simple and  takes the mystery out or preparing sushi rice.

 

It seems it is important to coat the rice uniformly with seasoned vinegar and to let it gently dry.  The idea is to try and coat each grain individually and let it cool gradually so that, when done properly, the rice will stick together when preparing the dish, but still break apart easily when eating it.

Notice that Chef John is using a flat cookie tray to coat and cool his rice.  He is not using a “hangiri”, the typical wooden sushi rice bowl.
