This video on the eHow Food channel shows a tasty recipe for a tomato, feta and spinach tart by personal chef, Maria Reina of Bella Cucina Maria. It looks like a good candidate for some simple makeover techniques that we can use to try and reduce the fat content of this recipe even further.
The scallions and tomatoes can be or sauteed in a non stick cooking pan with a minimum amount of oil or they can be steam fried with no oil.
The feta cheese can be replaced with a feta cheese substitute made with tofu.. Bryanna Clark Grogan has a “tofu feta” recipe in her The Almost No Fat Cookbook.
There are a variety of techniques to replace the egg wash. One of the simplest is to simply brush the dough with soy milk instead of an egg wash.
I like chef Reina’s suggestion to use a serrated knife to cut though the tomatoes.
