Sweet Potato Black Bean Stew by Karl Tyler

capture_16102014_142729Karl Tyler prepared this stew following a recipe published in ReadyMade Magazine.  It’s loaded with a lot of fresh healthy vegetables.  Karl topped his stew with dairy cheese, which could be replaced with a non-dairy cheese alternative.  This is a simple healthy one pot recipe that can be made ahead for use later in the week.  Like most stews, it probably tastes better after the flavors mingle for a couple of days.  It looks delicious.  Enjoy. Cilantro Jalapeno Hummus Recipe by Jason Hill

capture_30092014_113617Chef Jason Hill shows how his wife kicks up a hummus recipe by adding cilantro and jalapeno peppers to a typical hummus recipe (examples here and here), which blend garbanzo beans with a mixture of different spices, lemon juice, garlic, tahini and a little olive oil.  Hummus is delicious and healthy.  Use it as a sandwich spread, in wraps, or as a dip.  Combine it with some bread and fresh vegetables and it makes a nice appetizer, lunch or snack. Vegan Queso Cheese by Michelle Johnson

This is a melty, gooey cheese recipe, ideal as a queso cheese.  Sauteed onions, bell pepper, jalapeno pepper and garlic are added to a blender along with soaked cashews, cornstarch, white miso, vegetable broth, nutritional yeast and some spices.  After everything is blended, pour the mixture into a pot and heat it until it thickens.  Simple and delicious. Tropical MANGO SALSA by Deronda

capture_13092014_150524A mango salsa is simply made with fresh chopped vegetables, primarily mangoes, red onions, and red peppers.  In this recipe demo, Deronda also squeezes lime juice on her freshly chopped mangoes to keep them from oxidizing.  This is a common technique with avocados.  This recipe makes a delicious dip as well as a topping for entrees.
