Grilled Vegetable Focaccia Sandwich by Maithily Kale

capture_09112014_140647Maithily demonstrates how to make a delicious sandwich with grilled vegetables and crunchy focaccia bread.  The main ingredients are bell peppers, eggplant and zucchini which she marinades with olive oil and spices.  She assembles the grilled vegetables with grated cheese on focaccia bread, and toasts it in a panini grill.  This is a great sandwich for lunch or cut in smaller sections as an appetizer.  For those who wish to make it a vegan sandwich, simply use non dairy cheese.  Enjoy. Tofu Omelette by Bhavna Patel

capture_01102014_130212Bhavna demonstrates an eggless omelette made with tofu, milk, spices, and garbanzo bean flour.  For a filling, she uses tomato, onion, spinach and cheese.  She points out a thicker batter could be used to make a tofu scramble, while a thinner batter is better for making an omelette.  She uses the garbanzo flour as a binder, which helps to stop the omelette from breaking as you turn it, plate it, etc.  Plant based milk and cheese can be used the replace the dairy products.  This is an easy, healthy, and delicious recipe. Spicy Black Bean Casserole by Karen Bukolt

capture_25092014_091335This casserole is delicious and loaded with healthy ingredients; celery, bell peppers, black beans, cilantro, onions, chili sauce, maple syrup, and spices.  Karen mixes panko bread crumbs with cheese as a topping for this casserole.  The cheese could easily be a vegan substitute if you desire.  You can serve this casserole with tortillas, or brown rice and a salad.  It can be made ahead for a lunch or dinner later in the week.
