Vegan Mushroom Gravy by Julie Marie

capture_15012015_131914Julie Marie demonstrates how to make a healthy mushroom gravy without any oil or dairy.  She uses this gravy as a sauce over pasta layered on a bed of spinach.  It can also be used as a gravy on meatloaf, mashed potatoes, etc. 

She water sautes (without any oil) button and baby portobello mushrooms and onions.   She adds vegetable broth, herbs, spices, tamari to provide flavoring.  She uses cornstarch to thicken the gravy and soy milk to create a creamy dish.  She tops pasta layered over spinach with this gravy for her version of mushroom stroganoff.

This is a very easy and healthy gravy to make.  Enjoy.
