Homemade Pasta with Wild Mushroom Tomato Sauce by Roberto Martin with Chloe Coscarelli

capture_11092014_121223Although in this video, Roberto and Chloe make homemade pasta, this wild mushroom – tomato sauce recipe is very good with store bought pasta.  The sauce recipe is made with diced onions, garlic, several types of chopped mushrooms, red wine, chopped tomatoes, dried and fresh spices and herbs.  He uses the liquid remaining after reconstituting dried porcini mushrooms to add a special rich flavor to his sauce.  This is a delicious and healthy meal.  You need to try it.

Roberto also teaches us a simple technique to activate the oils in dried oregano.  This technique can be used with other dried spices.

Roberto Martin is the personal chef for Ellen DeGeneres and Portia de Rossi.
