How to make traditional hummus by Bachar Haikal

capture_15092014_111034This is a traditional recipe for hummus demonstrated by Bachar Haikal who owns two Lebanese restaurants in Melbourne’s South East which has an enormous Jewish population.  This recipe uses olive oil as a garnish rather than as a key ingredient, so it has a lower fat content than many other recipes.  It’s easy to make.  Of course, we’ll probably use modern tools rather than the traditional mortar and pestle.  Hummus can be served as a healthy appetizer, snack or lunch, served with a crispy bread or a variety of vegetables.  Enjoy it. Quinoa Recipe – Spanish Style by Chef Buck

capture_12092014_142156Would you like a pilaf dish with Spanish flavors, made with quinoa instead of rice?  In this video, chef Buck shows how easy it is to make one.  The technique is simple, saute a mix of chopped vegetables and spices.  Instead of adding previously cooked quinoa, Chef Buck adds uncooked quinoa to his sauteed vegetable mix, and then adds water and lets it simmer.  After it has simmered for about 15 minutes, he lets it cool a little before adding more fresh chopped raw vegetables.  This recipe is delicious!  Try it. Quinoa Pilaf – an Indian Recipe by Aditai

capture_12092014_134051Aditi shows it is easy to cook a delicious and healthy Indian style quinoa dish for either a main dish or a side dish.  The techniques are simple.  Cook the quinoa very similarly to cooking rice.  In a separate pan, saute a mixture of spices and healthy vegetables.  Then add them together, mix and add some seasonings.  This recipe includes a nice mixture of healthy ingredients, and it can be prepared in less than 20 or 30 minutes.
