Mexican Tomato Soup by Jamie Oliver

capture_01102014_134530Jamie cooks a wonderful tomato soup, and serves it with a salad, and tortilla chips.  This is a great, fast, and healthy recipe for brunch, lunch or dinner.  It’s made with spring onions, coriander, garlic, roasted peppers, canned tomatoes, water, lime and rice.  He uses a little cheese on his salad, and tortilla chips.  He also makes a yogurt drizzle on top of his soup.  You can change this from vegetarian to vegan with vegan substitutes.  This is a fast, and easy to make recipe. Black Bean Soup by Michelle Johnson

capture_28092014_112945Here is a tasty black bean soup made with fresh vegetables and canned black beans.  Michelle chops and sautes onions, carrots, celery, garlic and spices.  Then she adds rinsed canned black beans and vegetable broth, and simmers the soup mixture.  Then she blends it, reserving some beans to add to her soup for texture after she blends it.  Easy to make.  Delicious.  And good for you. Creamy Sweet Potato Soup by EasytoCookTV

Chilled Avocado And Cucumber Soup by Tom Lin

capture_09092014_142907Chef Tom Lin demonstrates an extremely simple, easy to make delicious vegan soup.  Simply cut up an avocado, peal and chop a cucumber, add cilantro, add some lemon juice, salt and pepper, soy milk, and blend it all together.  Season to taste, if needed.  Add some sliced almonds for a garnish.  How easy is that.  Serve it with some crusty bread and a salad for a delicious, healthy, plant based lunch or dinner. Cream Of Mushroom Soup by Amanda Cerny

capture_25082014_132018_cropAmanda Cerny likes mushrooms and coconut milk.  She includes them as key ingredients as she creates a vegan cream of mushroom soup.

The mushrooms are healthy and are a strong anti-cancer ingredient.  However, Amanda’s soup contains coconut milk, which has been shown to have artery clogging characteristics.  This recipe is a good candidate for a makeover — where the coconut milk is replaced with almond or soy milk.  We’ll have to try it.
